According to research by the UNC School of Medicine, oxalate compounds can increase inflammation in the intestines. The study examined tissues from both IBD patients and healthy individuals.

The study found that in healthy individuals, oxalate is expelled from the body, while in IBD patients, it becomes difficult due to a lack of certain proteins.

These proteins, SLC26A2 and SLC26A3, play a crucial role in the intestinal system. Their deficiency leads to increased inflammation, and a lack of these proteins was observed in the tissues.

It is important to note that these findings can help in understanding the effects of foods. However, patients should consult a nutritionist before making dietary changes.
